Broccoli Stir-Fry with Peanut Sauce

Broccoli Stir-Fry

● 1 head broccoli (cut into florets)

● 1 carrot (julienne or thin discs)

● 3 cloves garlic (minced)

● 1 yellow onion (julienned/thinly sliced)

● 6 cherry tomatoes (halved)

● 1 tsp cumin powder

● 1 tsp curry powder

● 1 tsp ginger powder

● 1⁄2 cup safflower or canola oil

● 1⁄2 cup water

Put broccoli into a hot pan and add water and half the oil. Let simmer until water is gone and broccoli appears to be sautéing.

Add carrots, onion, and garlic, and add the rest of the oil. As the onions and garlic begin to become translucent and aromatic, add the dry spices and stir very well, then cover.

Once broccoli is tender, remove from heat, add tomatoes and stir together, add salt and pepper to taste.

Spicy Peanut Sauce

● 1⁄2 cup spicy peanut butter

● 3 leaves fresh basil

● 1⁄4 cup yogurt or sour cream

● 2 cloves garlic

● 1⁄4 cup water

Using a blender, or immersion stick, blend everything together well, if needed add water to get to desired texture. If no blender, mince everything extremely well and whisk together in a large bowl.

Salt to taste, top your broccoli stir fry, and enjoy!
